Barleygrass

As you begin to use these wonderful Superfoods, you will easily get a taste for them and soon gauge how much to use of each, and where you like them best. The proof of the pudding is in the eating!
ChocaMaca
Nutritionally packed and great tasting.
Serves two if you want to share!
• 1 banana
• 1 cup of milk (rice, oat, nut or seed milk)
• ½ – 1 tablespoon Raw Cacao Powder
• ½ – 1 even tablespoon Maca
• Honey to taste or add a date
Use small/hand blender or Smoothie Maker.
Simply blend and enjoy!
Optional variations
• 1 teaspoon Bee Pollen
• 1 teaspoon Barleygrass
Nut or Seed Milk
Make your own fresh, great tasting nutritional milk in minutes.
Serves one to two
You need a small sieve for straining
• 1 cup pumpkin seeds (no need to soak) or almonds (soaked overnight) or Shelled Hemp Seeds (no need to soak)
• 4 cups of quality water
• Dash of quality salt (Himalayan Pink Crystal Salt)
• Honey to taste (or try Agave Syrup)
Use small/hand blender to blend your chosen ingredients until smooth.
Use the milk straight away or by the next morning, keeping leftovers in the fridge.
Please note that it is normal for separation to occur, but when you stir it up it gets nice and creamy again.
Barleygrass Lift- Off
Serves one
You need a glass and teaspoon
• ½ – 1 teaspoons Barleygrass
• Half glass of pure water
Mix well and drink.
A fantastic drink to start your day, as it totally alkalises your body and wakes you up. Also use as a fantastic ‘pick-me-up’ when you need a boost.
Self-Made Musli-airre
No rules – mix it up and make your own breakfast
• Goji Berries
• Oats
• Seeds – hemp, sunflower, pumpkin, sesame
• Nuts – brazil, almond, walnuts, cashew, hazelnut (TIP: soaking the seeds and nuts for about 20 minutes will make them easy to digest).
• Sliced banana, pear or apple
• Nut milk, rice milk or water
Soak all ingredients together for about 10 minutes
Add a sprinkle of Maca, Cacao, Bee Pollen and/or Barleygrass
Enjoy – this will keep you going all morning!
Sunflower/Pumpkin Dip
• 1 cup soaked and sprouted sunflower or pumpkin seeds
• ½ tbsp oil-soaked chopped garlic
• ½ tbsp tahini
• ½ – 1 tsp Barleygrass powder
• A squeeze of lemon
• Dash Tamari/Shoyu
Combine all ingredients in a food processor or good hand blender.
Add oil (flax or hemp), herbs/spices to taste such as cumin, cayenne, basil, soaked sun dried tomatoes, olives.
Spinach Dip
• 2 cups spinach
• 1 small or a ½ large avocado
• ½ tbsp fresh lemon juice
• ½ tsp Barleygrass powder
• ½ tsp Raw Cacao Powder (yes it really does work!)
• ½ tsp Himalayan Crystal Salt
Blend all ingredients together and enjoy with salad, cruditès and rye bread, or rolled-up with grated vegetables in lettuce or cabbage leaves like a tortilla wrap – delicious and easy!
Raw ‘Pasta’ Sauce
• 2 fresh tomatoes
• 3 soaked sun-dried tomatoes
• Oil-soaked chopped garlic
• 1 small red pepper
• 1-2 sticks celery
• ½ avocado
• 1-2 dates
• 1 tsp Barleygrass
• ½ tsp Cacao Powder
• Dash of olive oil
• Good squeeze fresh lemon
• ½ tsp Himalayan Crystal Salt or Tamari/Shoyu
Blend the ingredients together, adding fresh herbs to taste such as basil, oregano, thyme etc. for an Italian taste, or add some good Indian curry paste/pickle to spice things up.
Once blended, add a sprinkle of Goji Berries into the mix.
Enjoy with a raw vegetable tagliatelle – courgette and carrot, peeled lengthways using a vegetable parer, or enjoy with cooked spelt, corn, rice or vegetable pasta.
Truffle Treat
• 4 tbsp dark tahini
• 2 tbsp Raw Cacao Powder
• 2 tbsp finely chopped dried apricots
• 2 tbsp finely chopped dried dates
• 2 tbsp finely chopped Goji Berries
• 1½ tbsp honey or Agave
• 1/4 tsp Himalayan Crystal Salt
• Extra Cacao Powder to dust
Optional extras: Alternative dried fruits, coconut oil, ginger powder, orange essence, or
shelled hemp seeds.
Mix the tahini with the raw cacao powder in a bowl and add all the other ingredients mixing well as you go.
Should you want to add more of the agave syrup or honey add it slowly and taste as you go.
If you can still taste the tahini too strongly, then add some more of the raw cacao powder, and if the mixture is too runny, add even more cacao powder so the truffle mixture is stiff enough to roll into balls.
When your truffle balls are rolled to the size of regular chocolate truffles, then sprinkle raw cacao powder and shelled hemp seeds on a plate and roll each ball in it to cover completely.
Store in the fridge – if they last that long!
You may want to dust in raw cacao powder before serving, if the balls have absorbed the cacao.
