The Truth About Hospital Food

‘Dispatches’, a C4 programme last night revealed the awful truth about NHS catering in many hospitals.

The revelation began when Mark Sparrow, a journalist, spent ten weeks in traction in hospital and was forced to rely on NHS food for his sustenance. But the quality of his meals was so bad that he created a blog and began to record his meal time experiences by photographing the food and filming many of his meals.

The shocking truth about catering in the NHS has now been revealed. Not only is much of the food disgusting, but patients suffer as a result of cost-cutting, careless production and patient neglect.

So when NHS figures show that more people than ever before are leaving hospital malnourished and the NHS wonders why – therein lays the answer!

The NHS stands for National Health Service, with the emphasis being on health!

Food is fundamental to our health. Even two and a half thousand years ago this was recognised when Hippocrates, the father of modern medicine said ‘Let food be thy medicine and medicine be thy food’.

Yet incredibly today’s medical profession barely works with the power of food, rather the prescribing of ‘big pharma’ drugs.

On one hand the government recommends at least five fresh fruits and vegetables a day to stay healthy, and on the other hand the NHS totally contradicts that by serving ‘regenerated’ obliterated mush.

Perhaps the NHS could spend less money on bureaucratic red tape and unnecessary administration, and focus on health – which is what it’s paid to do with (our) tax-payers money.

THE STORY BEHIND MODUCARE®

R W Liebenberg, the originator of Moducare®, grew up in a South African community which was far removed from orthodox medical care. Instead, folk remedies based on plants and herbs were used to treat whatever ailed the family.

In 1958 Mr Liebenberg witnessed the dramatic recovery of an old man from a possibly fatal illness after he was treated with a South African herbal extract.

That event finally convinced him that certain plants contained a very important active elixir, which had not yet been discovered by man. It also prompted him to embark on research which was to continue for the next forty years.

In 1968, after ten years of private research when Mr R W Liebenberg treated family and friends, he discovered that the active part of the African folk medicinal herb was a fatty substance now known as Sterols. Essential Sterolin Products (ESP) was founded to continue research on a formal basis.

Prof. Karl Pegel of the University of Natal, in Durban and his assistant were the first scientists sponsored to work for ESP. Their goal was to isolate the elusive, active compound in the plant that was responsible for the remarkable cure witnessed ten years previously.

Prof. Pegel and his team were able to extract a fatty substance which was identified as Sitosterol by the South African Council for Scientific and Industrial Research (CSIR).

Sitosterol had been identified as early as 1922 and was used in large doses to block the absorption of dietary cholesterol. As well as the Sterol they also discovered the Sterolin.

The research team proceeded to develop a product that contained sterols and sterolins in the same ratio as found in the original herbal extract.

Their work led to the release in 1974 of a patented remedy for Benign Prostatic Hypertrophy (BPH). ESP exported this product to Germany, where it has been prescribed to hundreds of thousands of BPH patients over the past 25 years.

The research team then went on to investigate the immune modulating properties of sterols and sterolins. The research was published in international scientific journals and eventually resulted in the development of a patented product called Moducare®.

Today research still continues, driven by the conviction that the human immune system holds the key to overall health. The success of ongoing clinical trials confirms the faith that the combination of plant sterols and sterolins found in Moducare® is extremely valuable in the management of many diseases.

What has been discovered so far is that Moducare® can be used to maintain the health of the prostate gland as well as normalise the function of the immune system.

Moducare® is a mixture of sitosterol* (BSS) and its glucoside sitosterolin (BSSG) in a 100:1 ratio.

This formulation was originally marketed in 1974 in Germany, after its beneficial effect in the treatment of Benign Prostate Hypertrophy (BPH) had been established. Two years later, the same BSS/BSSG mixture was marketed in a product for Rheumatoid Arthritis.

In 1989, Professor Patrick Bouic and his colleagues at the Medical School of the University of Stellenbosch, Capetown, South Africa discovered that both sitosterol and sitosterolin have an immune modulating effect. Their findings which were published in the’ International Journal of Immunopharmacology’ 1996, 18, 693-700, eventually resulted in the patented product called Moducare®.

Moducare® taken orally at 3 capsules per day (each capsule contains 20.2 mg sterols/sterolins) restores weakened or reduced T cell activity in a balanced proportion of TH1 and TH2 cells. This enables the immune system to effectively counteract viral diseases (common cold, hepatitis, HIV, etc.) and various microbial diseases (tuberculosis, etc.). Moducare® also corrects a variety of autoimmune conditions (e.g. rheumatoid arthritis) usually arising from an excess secretion of inflammatory factors. However, Moducare® is not a drug: it does not interfere with any metabolic processes of either the patient or an infecting agent but it is rather a catalyst or messenger initiating a correction of existing immune system imbalances or maintaining adequate existing balances. It thereby helps an individual to maintain good health or fight a disease effectively. The use of Moducare® is ideal in conjunction with drug treatments that tend to disturb the TH1:TH2 balance or where a disease results in a TH1:TH2 imbalance which a drug cannot correct.

*sitosterol: This compound is usually described in the literature as ß-sitosterol or beta-sitosterol. The chemical name is often shortened to “sterol”.

THE STUDIES:

Sterols / Sterolins for the Immune System

Reference: Bouic PJD. Sterols and sterolins: new drugs for the immune system? Drug Discovery Today 2002; 7:775-78. Clinical studies on sterols/sterolins

Tuberculosis (TB)
In a double-blind controlled study, the use of sterols/sterolins as adjunctive therapy helped TB patients recover faster, gain more weight, and exhibit less inflammation than those taking a placebo.

Marathon Runners and Immunosuppression
In this double-blind controlled trial, marathon runners who utilized the unique sterol/sterolin mixture did not exhibit any of the typical post-event immuno-suppression (e.g. neutrophilia, leucocytosis, lymphopaenia) seen in the placebo group. Moreover, those supplementing with plant sterols/sterolins were able to inhibit the inversion of CD4:CD8 ratios thereby blunting the temporary immunosuppresive effect of the race. In addition, the cortisol/DHEA-s ratio was maintained to that of pre-event levels in runners employing the BSS:BSSG mixture.

HIV Infection
In an open label study, HIV positive patients with CD4 cell counts above 500 cells/µl blood and who were not using anti-retroviral drug therapy showed stable CD4 cells counts and a decrease in their plasma viral loads after employing the BSS:BSSG mixture for up to 40 months. This group of patients maintained a predominantly TH1 profile indicating that their cell mediated immunity response accounted for both their viral control and prevention of CD4 cell loss.

Rheumatoid Arthritis

In a recent controlled trial, patients with rheumatoid arthritis (RA) had a significant reduction in their disease activity (according to American College of Rheumatology criteria) when employing the sterol/sterolin mixture.

Although both the treatment group and a placebo group in this study employed anti-inflammatory (e.g. diclofenac) and analgesic (e.g. paracetamol) medications, those patients using the plant sterol/sterolin mixture had a 48% response to the treatment compared to only 21% in the placebo group. Moreover, patients in the active group utilized fewer prescription medications suggesting that their quality of life was better. Plant sterols/sterolins, the authors note, may work similarly to the product Flemun from the German Company Intermuti Pharma which decreases cyclooxygenase and lipoxygenase activity in vivo and in vitro.

Allergic Rhinitis/Sinusitis
Those suffering with allergic conditions exhibit a predominantly TH2 profile which implies more inflammatory IL-4 secretion and hence greater release of IgE. In testing this hypothesis, 24 individuals with allergic rhinitis/sinusitis were given the sterol/sterolin mixture over a 12-week period and found to have significant reductions in their objective- (e.g. reduced rhinorrea, post-nasal drip, nasal turbinate hypertrophy, IgE levels) and subjective clinical symptoms.

Conclusion: Although the ability to control symptoms and the inflammation arising from a disordered immune system has been the mainstay of modern medical therapy, we stand on the brink of new knowledge that certain CD4 cell subsets and their soluble messengers can have a significant impact on the course of chronic disease.

While there are numerous natural products that contain phytosterols such as Gingko and Cat’s claw, it is only the 100:1 standardized mixture of plant sterols to sterolins that has been found to be optimal in balancing the delicate TH1:TH2 ratio at relatively low concentrations. Sterols and sterolins may then usher in a new era of treatment in which we try to repair the underlying abnormality rather than suppress the symptoms of disease.

Rheumatoid Arthritis (RA)

Reference: Louw,I, et al. A pilot study of the clinical effects of a mixture of beta-sitosterol and beta-sitosterol glucoside in active rheumatoid arthritis (RA). Am J Clin Nutr 2002; 75(2), 351S [Abstract 40].

Study: In a controlled trial, 18 patients were randomised to receive either 20mg BSS/0.2mg BSSG capsules (Moducare®) or placebo three times a day for 24 weeks. All patients had active RA as defined by American College of Rheumatology (ACR) criteria.

Patients in both the treatment and placebo groups used anti-inflammatory and analgesic medications for the duration of the study. No new therapies could be initiated during the study. Patient response was assessed in terms of ACR response criteria (>20% improvement).

Results: In the group receiving the BSS:BSSG mixture, statistically significant changes were noted in the mean tender joint count (85% ACR response); patient’s assessment of pain (28% response); patient’s global assessment of disease activity (33% response); physician’s global assessment of pain (47%) and the MHAQ decreased (47% response). The ESR also decreased significantly (56% response). The placebo group had no significant improvement using the ACR criteria.

Clinical Summary: Due to the potent anti-inflammatory properties of Moducare®, patients with RA may benefit from the addition of this phytosterol mixture to current management strategies.

Benign Prostatic Hyperplasia (BPH)

Reference: Berges RR, Windeler J, Trampisch HJ, et al. Randomized, placebo-controlled, double-blind clinical trial of ß-sitosterol in patients with benign prostatic hyperplasia. Lancet 1995; 345(8964):1529-32.

Study: In this double-blind clinical trial, 200 male patients (average age 65 years) with symptoms of benign prostatic hypertrophy, were randomized to receive 20 mg ß-sitosterol plus 0.2 mg ß-sitosterol glucoside or placebo three times a day for 6 months. The product employed in the trial was Harzol™ (distributed by Hoyer GmbH and Co, Germany) with each capsule containing 10 mg ß-sitosterol and 0.1 mg ß-sitosterol glucoside. Primary assessment of the study’s outcomes was performed using a modified Boyarsky scale at monthly intervals. Secondary outcomes including International Prostate Symptom Score (IPSS), urine flow, residual urine volume, and other parameters of urinary flow plus prostate size were measured at 3 and 6 months. Laboratory values such as PSA, complete blood cell counts and a urine culture were performed at baseline and the conclusion of the study.

Results: Those patients employing ß-sitosterol and its glucoside had a significant reduction in their Boyarsky scores with an average decrease of 6.7 points compared to only 2.1 points in the placebo group after 6 months of therapy. IPSS scores also decreased in a similar fashion with average reductions of 7.4 and 2.1 points in the active and placebo groups respectively. This reduction in Boyarsky and IPSS scores were paralleled by the changes in urinary flow characteristics. For example, those patients employing Harzol™ not only had an increase in peak urinary flow from 9.9 to 15.2 ml/s but also experienced a reduction in mean residual urinary volume from 65.8 to 30.4 ml/s after 180 days of treatment. In addition, average voiding time decreased by 15.5 seconds in those utilizing Harzol™ compared to 2.8 seconds in the placebo group. Prostate volume was not affected in either group.

Clinical Summary: Both the Harzol™ and Moducare® products have their origins with the company Essential Sterolin Products in Midrand, South Africa. The Harzol™ product employed in this study by Berges et al contains the same active ingredients as found in Moducare®, namely ß-sitosterol and ß-sitosterol glucoside in a 100:1 ratio. However, unlike Harzol™, each Moducare® capsule contains twice as much of the active ingredient (e.g. 20 mg ß-sitosterol and 0.2 mg ß-sitosterol glucoside). Thus patients with BPH may experience a significant change in their symptoms (e.g. better urinary flow, less urinary retention, and fewer night time awakenings) by employing the product Moducare® at a dose of one capsule three times a day for at least 6 months.

Once you realise that you’re probably sowing the wrong seeds in your subconscious, it’s time to go about planting the right ones, and that’s the theme in this post.

I remember so well when I was overweight, I felt and was so horrible about myself. My constant dialogue was about how fat I was – how my clothes looked horrible on me because they didn’t fit how I wanted them to, and how unattractive I felt. ‘Fat’ and ‘ugly’ featured a lot in my vocabulary – and boy, I felt guilty every time I ate. Every morsel was swallowed with the words ‘you’re already fat, you’ll get fatter now’

You know, I have never written that down before, and wow, the weight of those words was, in itself, the extra weight I was carrying around!

Today, I often hear people constantly reporting, as I did, that they have something wrong with them, whether it’s feeling ill or battling with weight issues. I can hear and see how they are keeping themselves stuck in a place they don’t want to be, just by their thoughts and dialogue, internal and external.

What I have learnt – undoubtedly, is that a journey such as wellness, weight loss, and change – begins in the head. A sure way to overcome a symptom is to reprogram the cause.

All ideas and beliefs – good or bad – are embedded into the subconscious by repetition, faith and expectation. By repeating a thought pattern over and over again it becomes automatic, and that’s a damaging fact when the thought pattern is negative. The subconscious is extraordinarily compelling – you will be ‘compelled’ to express outwardly whatever it is you are thinking.

So decide to embed great ideas into your unconscious/inner mind, so that your outward expression is great too!

This is where the importance of changing your beliefs comes into play – you must believe what you are embedding, just as you believe that when you put a tomato seed into the ground, it will grow into a tomato plant.

Thoughts are ‘seeds’ also, planted into your subconscious mind – realise that they to will grow after their kind. By watering and nurturing these seeds of thought, which we do all the time by thinking about them over and over again, you accelerate their growth. So plant consciously, know what you are doing and why you are doing it.

Reprogram your Thoughts!

Knowing that the subconscious will take on your negative attitudes and beliefs gives you the key to reprogramming yourself.

NEVER let a negative thought complete itself. Reverse it immediately.

The subconscious takes you absolutely literally and will block your conscious good intentions if you contradict them with oft-repeated negative beliefs. Embed your deeper mind consciously, watch your thoughts. Never talk or think of lack and limitation. Instead count your blessings and live in the joyous expectancy of the best, and invariably the best will come to you.

The Keys to Working with your Inner Mind :

“We do not need to work on conditions alone; we need to work on ourselves. The only place we can live our lack and limitation is in our minds. When we have done it there we shall find that the world; that is our body, our physical conditions will be a mathematical reflection of our inner state of mind.” Dr Joseph Murphy

• Watch that you are not dependent on other people for your happiness, joy or peace of mind – they only can be found within you.

• Avoid struggle and strain, don’t try and force things. You can’t actually compel a seed to grow, but you can provide the environment. You can plant the seed in nutritious soil, and nurture it.

• Worry, strain, fear and anxiety inhibit us; they get in the way, creating blocks and impediments in our life. Our thoughts make us either wealthy or poor, so choose the riches of life, right here and right now.

• The conscious mind accepts what you really believe, it accepts convictions. Once you convince your inner mind of the thing you want, it will immediately start to move you towards it.

• If you keep thinking, ‘I am fat’ or ‘I am ill’ etc, you will only magnify the situation. How you are experiencing yourself now is the sum total of your previous and present state of mind.

• Use the laws of the mind: repetition, belief and assimilation; the subconscious needs to accept the statement as fact to make it happen.

• Whatever you engrave your subconscious mind with will be expressed; it will come forth as form, function, experience or events – good or bad.

• Be willing to let yourself change, and whether you initially feel like it of not, focus on the good, appreciate who you are, what you have, and the world you live in – claim joy! Joy is expression of life. No will power, muscle or gritted teeth required.

So many of us don’t like to admit our weaknesses or our failings – I feel that it’s one of the big faults of our society that we are apparently supposed to get everything right first time if we’re going to be regarded as ‘successful’. If you find yourself, after this post, tuning the volume up on what your mind and dialogue is saying and find that it’s pretty negative, please do not beat yourself up with a big stick, but take this next quote on board…

You will never know how or work it all out for yourself – just believe, tune in to something greater than you, and claim guidance, action, peace, whatever you truly want. Let go and relax into it, do not give power to the circumstances or conditions that might try to hold you up.

Be aware of your thoughts and words, and when they are negative – reverse or replace them with better feeling ones before they take hold!

Decide to ditch the ones that keep you stuck, and choose better feeling ones that uplift and advance you.

The Big Fish Fight – Action!

Like many others I tuned in to watch Channel 4′s Big Fish Fight, as I genuinely take an active interest in what is going on in the world of food, health, nutrition, big pharma and the like.

I was delighted as Hugh Fearnley-Whittingstall fantastically lifted the lid on what goes on behind the scenes in supermarkets, particularly Tesco in this ‘fishy’ instance.

It appears (and very strongly so) that the ‘blue and white supermarket’ has a labelling issue – quoting ‘Responsibly Sourced Fish‘ on their labels, yet their contractors were filmed doing quite the opposite!

Yes – we are talking dolphins, turtles, sharks and ‘out of fashion’ fish all getting caught up in their big trawling nets that span miles, and thrown back DEAD!

Jamie Oliver in the meantime,  supported the cause with a special series of 10 bite-sized programmes ‘Easy ‘Sustainable’ Fish Suppers’ – recipes using coley instead of cod for example.

Now, I really enjoy cookery programmes, and was inspired by Jamie’s sustainable fish recipes, to the point that I went to Channel 4′s website to download them.

Being an inquisitive kinda gal, I read many of the comments posted below the recipes, and this is where I get to my point:

I was astounded to read how many people had gone to Tesco to source the fish to try Jamie’s recipes!!

Of course I understand that not everyone saw Hugh’s programme, but isn’t there a hint in the title that something is going on?

The strongest way we, the general public, can make a difference and balance the scales against the big corporates, such as supermarkets, big pharma etc., is to vote with our pockets! It will win every time if we actually participate.

Make it your business to know where your food comes from, how it is grown, fished or farmed. Spend your hard-earned money consciously. And when a well documented programme or series such as the The Big Fish Fight provides good ‘honest’ information – support it! At least you can then make a well informed buying decision.

Whether you are buying fish or food supplements – know what you are buying and why, and how it effects the environment.

It’s time to take responsibility for our actions, if we don’t take them seriously, how can we expect the corporates to?

Resolution Already Gone By the Wayside?

Already, there is a particular fast food corporation who is currently laughing at you in their advertising, knowing that you have probably not followed through on your New Year Resolution and suggesting you have ‘one of these‘ instead, it’s only 99p!

Take a moment here –  you don’t need to feel bad if your resolution has fallen by the wayside, and you certainly do not need to eat something that really will make you feel bad on many levels.

Rather, understand why your resolution fell by the wayside…

It’s winter, it’s cold – dark in the morning and dark early evening. The natural impulse is to eat more for fat storing on the body – this is an ancient ‘scarcity’ instinct, and for warmth in the cold. But, there is no scarcity now in our Western society, actually there is an over-indulgence.

Understanding the natural rhythm of your body automatically gives you information on how to choose to respond.

‘Ah – so I want to eat more because…’ That’s your cue to eat consciously, rather than mindlessly!

That in itself is a definite foothold in the right direction of your resolution – whether it is to lose weight, be healthier, fitter, even stop smoking. By eating – or doing anything consciously – you are being true to yourself, and more of yourself.

And you don’t have to wait to next New Year to make a resolution – you can do it right now!

Nutri-Health Wellness Programme Part One

At Christmas you’re already starting to think about what New Years Resolution you want to make. You might want to lose weight, stop smoking, get fitter, change jobs etc.

So you resolve to make your changes and go on to enjoy Christmas all the more, not wanting to worry about any bad habits/s because you’ll be changing them soon enough.

But… we all know that New Year Resolutions can fall by the wayside very quickly – even the fast food corporations are using it in their advertising to tempt you over, in fact one of them is already taking the mickey by saying – ‘never mind, have “one of these” instead!’

So, what you can do now is start to Get Your Head Around It, so that by Spring, you have the energy and the desire to start, continue and finish what you want to achieve!

Making a Change

As you embark on any personal change in your life – weight, fitness, mindset, wellbeing, goals – it’s important to understand this:

Your biggest need right now is to develop new beliefs: about yourself, about this change and about life in general. Nothing will have a bigger impact on the way you move through change.” Ariane de Bonvoisin

Let me ask you a question – what comes up for you when you think of ‘change’?

This is a key question as it touches on your beliefs – the things that you think are true.

It is our beliefs that tend to prevent us from making changes in the first place, not a lack of discipline or courage.

Grab a notebook and jot down what comes to mind when you think about change. (If you think that you don’t need to write it down – think again! Promised and proven tools and techniques only work if you work with them!)

I recognise resistance myself –  felt it, experienced it, and witnessed it in others whilst I’ve coached them to make a difference in their life. I don’t doubt for a moment that at some point you’ll feel resistance, and all I ask is that you be open-minded about the process.

Being open-minded is sexy …and the best thing about it is you don’t actually need to be ‘right’, or know the answer. It just means that you are open to learning – a very attractive and positive quality.

Are you tripping yourself up with outmoded beliefs?

Here is an old belief of mine: when I first woke up to spirituality, I thought for some bizarre reason, that in order to be truly spiritual one had be humble and not ask for anything, therefore I created a ‘poor’ mindset. And that was exactly what I got – a complete lack! I struggled financially, had poor health, an unsuccessful relationship – poor in all senses.

Then, what a paradigm shift I had when I understood that spirituality was abundance – enough of everything for everyone. Our birthright is to be ‘happy, healthy, wealthy, healed and whole’, and why would we want anything less?

And believe me, what a turnaround that was when I implemented that way of thinking – I have never looked back. Changes I made to my beliefs lead to a better job, as the owner of Nutri-Health, and onto entrepreneurial success by working with a top TV nutritionist. I also found a great, fulfilling relationship and healed some rifts and expanded my family. Importantly, I learned a lot more about myself.

We all have our journeys to undertake, and yours will be as powerful and as positive for you as mine was for me.

Can You Make the Change You Want? Absolutely YES!

There are universal laws – gravity for example, no matter how much you might argue about it or disagree with it, it exists! What goes up does indeed come down.

Well, here is another instance – where there is a negative emotion (fear or resistance for instance), there must be a positive one (courage or acceptance); you cannot have dark without light; you just have to find it.

If there is fear, there is faith.

Where there is doubt, you can surrender.

Impatience can become endurance.

Instead of blame, be honest.

Let go of guilt and forgive.

And instead of shame, let there be honour.

What if you got to decide how you would like to feel: happy or sad, angry or calm, approving or jealous – and then events were arranged so that all the people and circumstances of your life could make it so?

You’d probably choose to be happy, right?

So consider – your feelings whatever they are, are your choice. If you choose the wrong ones, then what manifests thereafter may not be! You can also call it ‘cause and effect’. You cause your effect – wow, that’s how powerful you are!

Knowing consciously how to make the right choices and create the right effects takes some learning about yourself – and that’s what this is about!

When your car tank is empty, you don’t sit there and get depressed and think it’s permanent – you go fill it up. It’s the same with life – when you’re running on empty, go fill up your tank with a better thought or action and get on with your life.Abraham/Hicks

WHAT ARE CHIA SEEDS?

Chia Seeds by Nutri-Health

There’s a new superfood that you’re likely to start hearing a lot more about, called Chia Seeds.

While you may be unfamiliar with Chia, you are probably aware of the health benefits of flax seeds. Chia Seeds are nutritionally superior to flax, as they are a richer source of omega-3, taste better, stores and remains fresher for longer.

Chia Seed is an ancient superfood that is currently experiencing a wonderful renaissance. The first record of Chia’s human consumption is 3500BC, and by 1500BC it had become a major cash crop in Mexico.

Why would you want to eat Chia Seeds?

Chia is a highly nutritious food and said to have:

•  twice the protein of any other seed or grain

•  5 times the calcium of milk, plus boron which is a trace mineral that helps transfer calcium into your bones

•  twice the amount of potassium as bananas

•  3 times the reported antioxidant strength of blueberries

•  3 times more iron than spinach

•  copious amounts of omega-3 and omega-6, which are essential fatty acids

Chia has been called a dieter’s dream food because when added to foods it bulks up, displacing calories and fat without diluting the flavour. This means that you can eat a typical serving, yet only consume about half the calories that might have eaten, because the food has been bulked up with Chia. Chia Seeds bulk up, then work like an incredible digestive broom, sweeping through the intestinal tract, helping to dislodge and eliminate old accumulated waste in the intestines. Many people find their stools also become more regular once they eat Chia Seeds.

Chia can be used in so many kinds of recipes – savoury, sweet, it works with anything. You might want to try them in salad dressings, cookie /cracker mixtures, smoothies, ice creams, juices and so on.

Chia Seed protein contains no gluten. This makes it ideal for anyone with a gluten sensitivity or simply wanting to find a replacement for gluten-containing grains like wheat, barley, rye and oats.

How to use Chia Seeds

The most common way to eat Chia is to first soak the seeds. They can very rapidly absorb a large amount of liquid, between 9-12 times their volume, in under 10 minutes.

Basic ‘Chia Seed Gel’

To make a basic Chia gel, simply add 1/3 cup of seeds (2oz) to 2 cups of water. Stir the mixture well, to avoid clumping, and then leave it in your fridge, in a sealed container. This will yield around 17oz of Chia Gel. You can begin to eat the gel almost immediately – just 10 minutes is enough time for the gel to form. However, more nutrients will be easily digestible after a few hours, so it’s ideal to make up a batch and leave it in the fridge, where it will remain good to eat for about three weeks.

Just reach into the fridge and take out some of the ready-made gel whenever you need it. You can add it to smoothies, mix it with salad dressings, puddings or breakfasts, or simply take it by the spoonful.

Chia will absorb anything – it doesn’t have to soak in water – you could try soaking it in apple juice  for example. That way, the intense sweetness of the apple juice is offset by the Chia and it tastes delicious.

Hemp or Almond milk both work wonderfully with Chia Seeds, making a creamy nutritious breakfast or dessert.

You can also blend fruits; for example bananas, raspberries, strawberries, then stir the Chia seeds into that mixture. Again, the longer the seeds are left to soak, the more their nutrients will be readily available to you, yet a meal like this could easily be ready to eat 10 minutes or less after preparing it.
