Chia Seeds have been used by ancient cultures such as the Mayans and Native Americans, who would take only a pouch of seeds and a gourd of water on their trips. Because Chia Seeds are so nutritional, they were the only food source taken on the trip, as when they were added with water the seeds hydrated their bodies for endurance during the long journey.
When you soak Chia Seeds in water, the shell opens up and absorbs up to nine times its volume. This forms a gel, which is called ‘Chia Seed Gel’. This gel helps to keep your body hydrated and is 90% soluble fibre, which is fantastically beneficial for your digestive track.

Chia seeds are a versatile Superfood which are excellent for good gut health, and because they are so fibrous, it’s very hard to overeat on - them making Chia Seeds great for any weight loss programme!
Chia Seeds can be eaten raw as a source of dietary fibre and omega-3 supplement. But they can be ground and baked in breads and cakes - although this will lose some of the nutritional content. At best Chia can be soaked in water to form a gel-like consistency and used in porridges, desserts, smoothies, drinks, soups and more.
As the taste of Chia Seeds is pleasant and mild, they easily combine with other foods without dramatically changing the taste instead, flavour is retained and nutrition is added!
Try these quick and easy recipes:
Chia-Seed Fresca
This is a fantastic drink to have first thing in the morning. The fresh lemon will wake up your liver and alkalise your body, while the Chia Seeds will assist the colon.
2 tsp Chia Seeds
10oz pure water
Juice of one lemon or lime
Honey or agave syrup to taste - optional
Simply stir ingredients together, wait 5-10 minutes and enjoy!
Chia–up Pudding (or Breakfast)
Serves four
Soaking 4 hours, 10 mins to make, setting 2 hrs (optional). No special equipment needed
1 x cup Chia Seeds
3 x cups (750 ml) pure water
1/2 x cup Mesquite Powder or Lucuma for an extra creamy taste
1 x tbsp Camu Camu
1 x tbsp Tahini
1 x tbsp of a natural sweetener such as agave syrup or raw honey
250g strawberries or any other berry you fancy.
2 tbsp Bee Pollen
Soak the Chia Seeds in the water for 4 to 8 hrs. With a stir intermittently to make sure all the seeds are gelling up evenly.
When ready, stir in the Mesquite or Lucuma, Camu Camu, tahini, & sweetener, then adding in the berries whole or chopped.
The mixture should now be very thick. Sprinkle the Bee Pollen on and eat it immediately or if for guests - spoon into a presentation mould, letting it set in the fridge for a couple of hours.
Turn out onto a pretty plate and then decorate with Bee Pollen.
Serve on its own or with Raw Banana Ice Cream:
4 x skinned and chopped bananas – freeze
Mash with blender or fork, adding a tbsp Lucuma for extra ice-creaminess
Serve – It couldn’t be more delicious!
